Grilled Bruschetta Toasts

- 1 loaf Italian bread, 1” slices
- 0.5 pint grape or cherry tomatoes, quartered
- 1 small yellow pepper, chopped
- 3 tbs.. olive oil
- 1 garlic clove, minced
- 2 Tbs. Fresh basil, chopped
- 3 Tbs. Parmesan cheese, grated

Preheat grill. Lightly toast both sides of bread slices for 2 minutes per side. Combine tomatoes, pepper, 1 Tbs. Oil, garlic and basil. Spoon tomato mixture onto toast and sprinkle with cheese. Dale’s Recipe Book Page 47
