Grilled Baked Potatoes
Potatoes stuffed with onion, green pepper, and butter, wrapped in bacon and foil, then grilled until tender and crispy.

- 6 whole baking potatoes
- 1 whole small Spanish onion, cut in 6 wedges
- 1 whole sweet green pepper, cut in strips
- 2 tbsp butter
- 6 strips bacon
- 1 pinch salt and pepper to taste
- 1 tbsp shredded Parmesan cheese, optional
Instructions

Scrub potatoes and cut a V-shaped wedge lengthwise out of the top of each.

Sprinkle cut sides with salt and pepper. Insert an onion wedge in each, top with green pepper and 1 teaspoon butter.

Wrap bacon around each potato. Place on a square of foil and wrap tightly.

Cover and bake on grill over medium-hot coals (or medium setting), turning occasionally, for 35-40 minutes or until potatoes are fork tender.

Fold back foil, return potatoes to grill, cover and cook 5-10 minutes longer to crisp the bacon.
