Green Onion and Potato Soup
A rich potato soup with green onions, dried mushrooms, and chicken that is mashed and stirred into a thick, warming bowl.
Ingredients
- 5 medium potatoes, peeled and sliced
- 0.5 bunch green onions, sliced
- 1 shiitake or Chinese black mushroom, soaked 30-45 min
- 1 chicken leg
- 1 cup milk
- 1 tbsp olive oil
- 1 bay leaves
- 1 tsp salt and pepper to taste
Instructions

Soak the mushroom in hot water for 30–45 minutes.

Sauté the green onions in a little olive oil over medium heat.

Add the sliced potatoes and a quart of water. Put in the bay leaves and the chicken leg. Simmer for an hour.

Dice the mushroom and add the mushroom pieces along with the soaking water to the soup.

Remove the chicken leg, cut the chicken into little pieces, and return the meat to the pot.

When potatoes are done, smash them with a fork or potato masher and stir the soup well. Add the milk, season with salt and pepper, and serve.
