Green Noodle Casserole
Spinach noodles topped with shrimp or crabmeat, green onions and bell pepper in a creamy mayo-sour cream sauce, finished with sharp cheddar cheese.

- 8 oz green or spinach noodles
- 1 lb cooked shrimp or crabmeat, diced cooked chicken
- 1 bunch scallions, chopped
- 0.3 cup diced green bell pepper
- 0.8 cup mayonnaise
- 0.8 cup sour cream
- 0.3 tsp Worcestershire sauce
- 1 cup grated sharp cheddar cheese

Preheat oven to 350°F. Butter a 2-quart casserole and set aside.

Cook noodles in salted boiling water until just barely al dente. Drain thoroughly and place in the bottom of the casserole.

Place shrimp (or crab/chicken), scallions and green pepper on top.

Combine mayonnaise, sour cream and Worcestershire sauce. Pour over shrimp and noodles.

Sprinkle top with grated cheese. Bake for 30 minutes.
