Green Chili Stew
A New Mexico-style stew of browned pork or beef with diced potatoes, onion, garlic, and green chilies simmered until tender with a soupy consistency.

- 2 lb pork shoulder or beef, cubed
- 2 tbsp vegetable oil
- 3 potatoes, diced
- 0.5 cup onion, chopped
- 1 clove garlic, crushed
- 2 tsp salt
- 4 oz diced green chilies
- 2 cup water
Instructions

Cube meat, sprinkle with salt, and brown in oil until golden.

Add diced potatoes; stir. Add onion, garlic, salt, and green chilies.

Pour in enough water to cover. Simmer covered, adding water as needed.

Cook 45–60 minutes until pork is tender and stew is soupy.
