Green Chili Pork Stew

- 2 lb pork shoulder, cubed
- 2 tbsp vegetable oil
- 2 tsp salt
- 3 potatoes, peeled and diced
- 0.5 cup onion, chopped
- 1 clove garlic, crushed
- 4 oz canned diced green chiles
- 2 cup water (or as needed to cover)
Instructions

Sprinkle pork cubes with salt. Heat oil in a large skillet over medium-high heat; brown pork on all sides.

Dice potatoes and combine with onion, garlic, and green chiles in slow cooker.

Add browned pork and enough water to just cover everything.

Cover and cook on LOW for 5–6 hours, adding more water as needed to keep a soupy consistency.

Taste and adjust seasoning. Serve in bowls with warm flour tortillas.
