Greek Souvlaki

  • 1 piece lemon, juiced
  • 0.3 cup olive oil
  • 0.3 cup soy sauce
  • 1 tsp dried oregano
  • 3 clove garlic, crushed
  • 4 lb boneless pork tenderloin
  • 2 piece green peppers, cut into 1-inch squares
  • 2 piece yellow onions, cut into 1-inch squares
  • 2 cup plain full-fat yogurt
  • 2 tsp pureed garlic
  • 2 piece cucumbers, peeled, seeded and grated
  • 2 tsp olive oil (for tzatziki)
  • 0 pita bread, for serving

Instructions

    In a large bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic. Add pork, onions, and green pepper; stir to coat. Cover, and refrigerate for 2 to 3 hours.

    Make tzatziki: drain yogurt 1 hour in cheesecloth. Combine with pureed garlic, salt, grated cucumber (after draining excess water), pepper, and olive oil. Refrigerate until chilled.

    Preheat grill for medium-high heat. Slide pork, pepper, and onion onto skewers.

    Grill kabobs for 10 to 15 minutes total, turning the skewers frequently.

    Serve on pita bread with tzatziki spooned on top.
