Greek Souvlaki

- 1 piece lemon, juiced
- 0.3 cup olive oil
- 0.3 cup soy sauce
- 1 tsp dried oregano
- 3 clove garlic, crushed
- 4 lb boneless pork tenderloin
- 2 piece green peppers, cut into 1-inch squares
- 2 piece yellow onions, cut into 1-inch squares
- 2 cup plain full-fat yogurt
- 2 tsp pureed garlic
- 2 piece cucumbers, peeled, seeded and grated
- 2 tsp olive oil (for tzatziki)
- 0 pita bread, for serving

In a large bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic. Add pork, onions, and green pepper; stir to coat. Cover, and refrigerate for 2 to 3 hours.

Make tzatziki: drain yogurt 1 hour in cheesecloth. Combine with pureed garlic, salt, grated cucumber (after draining excess water), pepper, and olive oil. Refrigerate until chilled.

Preheat grill for medium-high heat. Slide pork, pepper, and onion onto skewers.

Grill kabobs for 10 to 15 minutes total, turning the skewers frequently.

Serve on pita bread with tzatziki spooned on top.
