Ingredients
Servings
4
- 0.3 cup olive oil, divided
- 1 tbsp garlic, minced
- 1 0.3 cup tomatoes, medium chopped
- 0.3 cup dry white wine
- 0.5 tsp dried oregano
- 0.5 tsp red pepper flakes
- 1 lb shrimp, peeled and deveined
- 0.3 lb feta cheese, crumbled
- 0.3 cup fresh basil, chopped
- 0.5 lb rigatoni pasta
- 1 pinch salt and pepper
Instructions
- 1
Preheat oven to 400°F (200°C). Bring a large pot of salted water to boil for the pasta.
- 2
In a large oven-safe pot, sauté garlic in half the olive oil briefly. Add tomatoes and cook briefly. Add wine, salt, pepper, basil, and oregano. Simmer on low heat about 10 minutes.
- 3
In a separate pan, sauté shrimp in remaining olive oil, sprinkling with red pepper flakes as they cook. Remove shrimp from heat when they just lose their opacity.
- 4
Place shrimp in a baking pan. Sprinkle with crumbled feta. Spoon tomato sauce over feta. Bake about 10 minutes.
- 5
Meanwhile, cook rigatoni until al dente. Drain. Spoon the shrimp and sauce mixture over pasta to serve.
