  • 8 slice Kasseri cheese, 1/2-inch thick
  • 2 cup brandy
  • 1 cup all-purpose flour
  • 4 tbsp butter
  • 2 lemons, juiced
  • 8 rounds pita bread, brushed with olive oil, grilled and quartered
  • 1 cup Kalamata olives

Instructions

    Season both sides of the cheese with salt and pepper. Place cheese in a shallow dish, cover with brandy, and refrigerate for 2 hours.

    Season flour with salt and pepper. Remove cheese from the marinade, reserving 1/4 cup brandy. Dredge the cheese in seasoned flour.

    In a large sauté pan over medium heat, melt the butter. Pan-fry cheese for 2 minutes per side.

    Add the reserved brandy and carefully flambé. Squeeze lemon juice over the cheese and remove from heat.

    Serve immediately with grilled pita bread and Kalamata olives.
