Greek Omelet

  • 2 eggs
  • 1 tbsp water
  • 2 oz mozzarella cheese
  • 1 tomato, cut into thin slices
  • 6 fresh basil leaves
  • Pepper
  • Salt

Instructions

    In a small bowl, whisk together eggs and water. Preheat the griddle to medium heat. Spray griddle top with cooking spray. Pour egg mixture on hot griddle top and cook for 30 seconds. Spread tomatoes, basil, and cheese on top of the omelet. Season with pepper and salt. Cook for 2 minutes until egg firm. Fold omelet in half and cook on low for a minute. Servings and enjoy.
