Grated Sweet Potato Casserole

Old-fashioned grated raw sweet potato casserole with sugar, buttermilk, butter, pecans and cinnamon. Dense, moist and richly flavored — a classic Southern holiday dish.

  • 1 0.5 cup granulated sugar
  • 0.5 cup milk
  • 3 cup grated raw sweet potatoes
  • 2 large eggs
  • 0.5 cup margarine
  • 0.8 cup buttermilk
  • 1/8 tsp baking soda
  • 0.5 cup pecans
  • 0.5 tsp cinnamon

Instructions

    Mix sugar and milk in large bowl; add grated sweet potatoes.

    Beat eggs; add butter. Combine two mixtures.

    Add buttermilk, baking soda, pecans and cinnamon; mix well.

    Pour into 2-quart casserole and bake for 1 hour at 450°F.
