  • 2 eggs, separated
  • 4 tbsp sugar
  • ¼ tsp cream of tartar

    Wash the lemons and pat them dry.

    Hold the grater in your non-dominant hand and the lemon in the other over a cutting board or clean work surface.

    Use a fine grater or zester on the lemon rind, careful not to zest the white part, only the rind.

    Push the lemon away from you across the rough side of the grater, removing the colorful part of the fruit.

  5. 5

    Gradually turn the lemon until all sides are zested.
