Golden Gate Potato Casserole
Twice-baked style mashed potato casserole blended with cheddar cheese, sour cream and chives. A rich, crowd-pleasing side that can be made ahead.

- 8 medium potatoes, coarsely mashed
- 0.3 cup butter
- 2 cup shredded cheddar cheese, plus more for topping
- 1 tsp salt
- 0.3 cup chives
- 1 pint sour cream
- 1/8 tsp pepper
Instructions

Melt butter and cheese in a saucepan over low heat. Remove from heat and add sour cream, chives, salt and pepper.

Fold mixture into 8 coarsely-mashed potatoes and put into a greased casserole.

Cover and bake at 325°F for 25 minutes.

Uncover, sprinkle more grated cheese on top and return to oven just until cheese is melted.
