Golden Corn Cake

  • 1 cup corn meal
  • 1 cup flour
  • 1 cup milk
  • 0.3 cup sugar
  • 3/4 teaspoon salt
  • 1 egg
  • 5 teaspoons
  • baking powder
  • 2 tablespoons melted

    Preheat your oven to 350°F (175°C).

    Combine softened butter, masa harina, and water in a mixing bowl until smooth.

    Mix in thawed corn, cornmeal, sugar, heavy cream, salt, and baking powder until well combined.

    Add egg, buttermilk, and melted butter to the bowl and mix well.

    Melt butter in a large skillet over medium heat.

    Drop 2 tablespoons of batter per corn cake into the skillet, spacing cakes about 2 inches apart.

    Flatten slightly with the back of a spoon to form even rounds.

    Cook for 3-4 minutes on each side, or until the edges are set and the cakes are golden and cooked through.
