Ingredients

Servings
4
  • 7 oz fresh goat cheese (Montrachet)
  • 3 0.5 lb Gruyère or Swiss cheese, shredded
  • 0.3 cup dry white wine (Chablis or Macon), plus 1 tbsp
  • 1 clove garlic
  • 1 0.5 tbsp unsalted butter
  • 1 0.5 tsp strong Dijon mustard
  • 2 tbsp Grappa or Cognac
  • 6 slice thick country-style bread
  • 6 sprig fresh savory or thyme

Instructions

  1. 1

Coarsely chop the goat cheese, trimming away any mold. Shred the Gruyère.

  2. 2

Place the wine and garlic in a small, heavy saucepan. Bring to a boil over low heat and reduce by half.

  3. 3

Add the goat cheese and Gruyère gradually, stirring in a figure-eight motion until melted. Stir in butter and Dijon mustard.

  4. 4

Add the Grappa or Cognac. Season with freshly ground white pepper.

  5. 5

Toast or grill the country bread slices. Ladle the warm fondue over each slice and garnish with fresh savory or thyme.
