Goat Cheese Fondue On Country-Style Bread

- 7 oz fresh goat cheese (Montrachet)
- 3 0.5 lb Gruyère or Swiss cheese, shredded
- 0.3 cup dry white wine (Chablis or Macon), plus 1 tbsp
- 1 clove garlic
- 1 0.5 tbsp unsalted butter
- 1 0.5 tsp strong Dijon mustard
- 2 tbsp Grappa or Cognac
- 6 slice thick country-style bread
- 6 sprig fresh savory or thyme

Coarsely chop the goat cheese, trimming away any mold. Shred the Gruyère.

Place the wine and garlic in a small, heavy saucepan. Bring to a boil over low heat and reduce by half.

Add the goat cheese and Gruyère gradually, stirring in a figure-eight motion until melted. Stir in butter and Dijon mustard.

Add the Grappa or Cognac. Season with freshly ground white pepper.

Toast or grill the country bread slices. Ladle the warm fondue over each slice and garnish with fresh savory or thyme.
