Giant Straw Potato Galette

- 6 medium baking potatoes, peeled
- 6 tbsp clarified butter, or more as needed

Using a mandoline, cut the potatoes into matchstick-sized pieces. Immediately dry the potatoes with a cloth towel to remove excess starch.

Film a large frying pan with a 1/16-inch layer of clarified butter and heat until very hot but not browning.

Add the potatoes, making a layer about 3/8-inch thick. Season with salt and pepper. Add 2 to 3 more spoonfuls of butter.

Press down firmly with a spatula so the potatoes flatten as they cook. Frequently press them down to encourage even browning.

Cook until the bottom is deeply golden, about 10 to 12 minutes. Carefully flip and cook the other side for another 8 to 10 minutes.

Slide onto a cutting board, season with salt, and cut into wedges to serve.
