Gebhardt's Casserole

Hearty Tex-Mex casserole with rice, tomato sauce, olives, chili powder and cumin mixed with chopped cooked meat and broth, topped with biscuit dough for a rustic one-dish meal.

  • 3 cup cooked rice
  • 1 cup tomato sauce
  • 0.5 cup stuffed olives
  • 0.5 tsp salt
  • 1/8 tsp pepper
  • 2 tsp chili powder
  • 0.3 tsp ground cumin
  • 2 cup chopped cooked meat
  • 1 cup meat broth
  • 1 can refrigerated biscuit dough

Instructions

    Combine rice, tomato sauce, olives, seasonings, cooked meat and broth. Pour into a well-greased 2-quart casserole.

    Bake at 350°F for about 30 minutes.

    Place biscuits on top of casserole; return to oven and bake at 400°F until biscuits are done, about 10 minutes.

    Garnish with sliced olives if desired.
