Gazpacho Salad

- 1 cucumber cucumber, peeled and sliced
- 3 scallions scallions with green ends, coarsely chopped
- 4 plum tomatoes plum tomatoes, quartered
- 1 red pepper red pepper, cored, seeded, and coarsely chopped
- 2 shallots shallots, peeled and minced
- 0.3 cup egg substitute (equivalent to 1 egg)
- 0.8 cup tomato juice
- 0.5 cup extra virgin olive oil
- 0.3 cup red wine vinegar
- 1 dash Tabasco sauce
- 2 tbsp fresh chopped dill
- 1 tsp salt and pepper to taste

Prepare dressing: combine shallots, egg substitute, tomato juice, olive oil, red wine vinegar, Tabasco, dill, salt, and pepper. Whisk until smooth.

Refrigerate, loosely covered, until thick, at least one hour.

Combine cucumber, scallions, tomatoes, and red pepper in a bowl.

Toss vegetables gently with the dressing just before serving.
