Garlicy Clams

  • 2 tbsp olive oil
  • 2 dozen littleneck clams, cleaned and scrubbed
  • 0.5 cup finely chopped onions
  • 2 tbsp chopped garlic
  • 0.3 cup dry white wine
  • 1 lb linguine, cooked until tender
  • 2 tbsp finely chopped fresh parsley leaves

Instructions

    In a large sauté pan with a lid, heat the olive oil over medium heat.

    When hot, add the clams. Season with salt and pepper. Cover and sauté for 6 to 8 minutes.

    Add the onions, garlic, and wine. Continue to sauté for 2 minutes, or until all shells have completely opened. Discard any shells that do not open.

    Add the cooked linguine. Season with salt and pepper. Sauté for 2 more minutes.

    Add the parsley and toss well. Serve on a large platter drizzled with olive oil.
