Garlicy Bread Soup

  • 2 tbsp olive oil
  • 2 cup chopped onions
  • 0.3 cup finely chopped garlic
  • 1 bay leaf
  • 1 pinch crushed red pepper
  • 2 quart chicken stock
  • 2 cup diced day-old French bread
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmigiano-Reggiano cheese
  • 1 tbsp finely chopped fresh parsley leaves

Instructions

    In a large saucepan over medium heat, add the olive oil. When hot, add the onions, garlic, bay leaf, and crushed red pepper. Season with salt. Sauté until slightly caramelized, about 6 to 8 minutes.

    Stir in the chicken stock. Bring to a boil, then reduce to a simmer and cook for 40 minutes.

    Increase the heat and whisk in the bread and cream. Continue whisking until the bread has dissolved into the soup, about 10 minutes.

    Using a hand-held blender, purée the soup until smooth. Adjust seasoning with salt.

    Ladle into bowls and garnish with grated Parmigiano-Reggiano and fresh parsley.
