Garlic Soup

A rustic Spanish-style garlic soup with breadcrumbs, tomatoes, paprika, and egg dropped into the simmering broth.

  • 0.3 cup olive oil
  • 6 cloves crushed garlic, or more to taste
  • 1 0.5 cup fresh white breadcrumbs
  • 3 medium ripe tomatoes, peeled and chopped
  • 1 tsp ground sweet paprika
  • 0.5 tsp chili powder
  • 1 l water
  • 2 eggs, lightly beaten
  • 0.3 cup chopped fresh parsley

Instructions

    Heat oil in large pan; add garlic. Cook over gentle heat 1–2 minutes until soft but not brown.

    Add breadcrumbs and cook over medium heat 3 minutes or until they turn a light golden brown.

    Add tomatoes, paprika, chili powder, and water. Bring to a boil; simmer covered for 30 minutes.

    Add eggs in a thin stream to simmering soup. Cook over low heat 2 minutes longer.

    Pour into serving bowl, sprinkle with parsley, and serve hot and heavily seasoned.
