Garlic and Rosemary Shrimp

  • 1 lb medium to large fresh shrimp, peeled and deveined, tails on
  • 2 tbsp butter
  • 0.3 cup extra-virgin olive oil
  • 1 head garlic (about 10 cloves), peeled
  • 0.5 cup dry white wine or chicken broth
  • 2 tbsp white wine vinegar
  • 1 tbsp fresh lemon juice
  • 3 count bay leaves
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp dried oregano
  • 0.5 tsp dried crushed red pepper
  • 0.5 tsp salt

Instructions

    Pat shrimp dry with paper towels. Set aside.

    Melt butter with olive oil in a large skillet over medium-high heat.

    Add garlic cloves and sauté 2 minutes until beginning to soften.

    Stir in wine (or broth), vinegar, lemon juice, bay leaves, rosemary, oregano, crushed red pepper, and salt.

    Add shrimp; cook 2–3 minutes per side until pink and cooked through.

    Remove bay leaves. Serve over rice or crusty bread, spooning pan juices generously over shrimp.
