Mom’s Pan Fried Fish Growing up near the South Toe river in the mountains of North Carolina, my brother and I would make fishing poles out of sticks with line made of string and straight pins bent into hooks. We would spend hours fishing, so we could have mom’s fried fish for supper. She would clean the fish and roll them in equal amounts of flour and cornmeal mixed with salt and pepper, and pan fry them in hot oil until golden brown.
