- 0.3 cup golden raisins
- 0.5 cup Marsala wine (or dry sherry)
- 1 cup all-purpose flour
- 1 pinch salt
- 2 large egg yolks
- 0.5 cup milk (approximately)
- 2 cup vegetable oil, for frying
- 0.3 cup powdered sugar, for dusting

Soak the golden raisins in Marsala wine for 30 minutes. Drain, reserving the wine.

Put the flour and salt into a mixing bowl. Gradually blend in the reserved Marsala wine with a wooden spoon, stirring very gently until smooth.

Stir in the egg yolks and just enough milk to bring the batter to the consistency of a thick cream sauce. Fold in the drained raisins.

In a large skillet, heat 1 inch of vegetable oil to 375°F (190°C).

Using about 3 tablespoons of batter for each fritter, spoon batter into the hot oil. Do not crowd the pan. Fry until golden, turning once, about 4 to 5 minutes total.

Drain on paper towels and repeat with the remaining batter. Dust generously with powdered sugar and serve hot.
