Fried Tomatoes

  • 2 each eggs
  • 6 each red tomatoes, cut into 4 slices each
  • 2 cup bread crumbs
  • 2 cup olive oil
  • 1 each strip of bacon (optional)
  • 3 cup mayonnaise
  • 0.5 cup mustard, any kind
  • 1 each tsp. salt
  • 1 each onion, diced
  • 1 each tsp. pepper
  • 1 each tsp. cayenne pepper
  • 0.3 cup parsley
  • 0.3 cup thyme
  • 1 each . Heat oil in large fry pan.
  • 2 each . Make egg wash with the eggs, add a little water.
  • 3 each . Dip tomatoes in egg and then in bread crumbs.
  • 4 each . Place in fry pan and fry until golden brown on both sides.
  • 5 each . Set aside on paper towel to remove excess oil.
  • 6 each . To make sauce, mix together mayonnaise, mustard, onion, salt,

    On salad plate place three tomatoes in an arrangement and place a large tablespoon of mayonnaise in the middle.
