Fried Sweet Potato Pies

  • 1 0.5 lb sweet potatoes
  • 1 tbsp vegetable oil
  • 2 cup all-purpose flour
  • 2 tsp sugar
  • 0.8 cup solid vegetable shortening
  • 3 tbsp ice water
  • 1 egg yolk
  • 0.3 cup pure cane syrup or molasses
  • 1 tsp cinnamon
  • 0.3 tsp nutmeg
  • 1 dash bourbon
  • 1 cup powdered sugar
  • 2 tbsp milk

    Preheat oven to 400°F. Toss sweet potatoes with oil, salt, and pepper. Roast on a baking sheet until tender, about 1.5 hours. Cool completely.

    In a mixing bowl, combine flour, salt, and sugar. Cut in shortening until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough comes together. Refrigerate 30 minutes.

    Peel and mash the roasted sweet potatoes. Stir in egg yolk, cane syrup, cinnamon, nutmeg, and bourbon. Mix well.

    Roll out dough and cut into 4-inch circles. Place 2 tablespoons of sweet potato filling in the center of each circle. Fold dough over and crimp edges to seal.

    Fry the pies in 350°F oil until golden-brown, about 4 to 5 minutes. Drain on paper towels.

    Whisk together powdered sugar and milk for glaze. Drizzle over warm pies before serving.
