Fried Sweet Potato Hashbrowns

Crispy pan-fried grated sweet potatoes cooked with bacon and onions until caramelized and golden.

  • 0.5 lb diced bacon
  • 1 cup chopped onions
  • 0 to taste salt and freshly ground black pepper
  • 1 tbsp chopped garlic
  • 2 lb sweet potatoes, peeled and grated

    In a large skillet, render the bacon until crispy, about 8 minutes. Remove bacon and set aside, leaving the fat in the pan.

    Add the onions to the pan, season with salt and pepper, and saute for 3-4 minutes.

    Add the garlic and grated sweet potatoes. Season with salt and pepper. Saute for about 10-15 minutes, stirring occasionally, until the potatoes are tender and golden.
