Fried Seafood Po Boy

A New Orleans classic po boy loaded with golden-fried shrimp, softshell crab, and oysters on French bread with mayo, lettuce, and tomatoes.

  • 1 to taste vegetable oil for frying
  • 0.5 lb large shrimp, peeled and deveined
  • 4 whole softshell crabs, cleaned
  • 0.5 lb shucked oysters
  • 1 cup masa flour
  • 0.5 cup flour
  • 0.5 cup yellow cornmeal
  • 1 to taste salt
  • 1 to taste cayenne pepper
  • 1 to taste Tabasco sauce
  • 2 whole small French bread loaves
  • 0.3 cup mayonnaise
  • 1 cup shredded lettuce
  • 6 slice fresh tomatoes

Instructions

    Heat the oil in a large saucepan. Season the shrimp, softshells, and oysters with salt and cayenne.

    In a shallow pan, combine 1/2 cup masa and flour. Season with salt and cayenne.

    Dredge the shrimp in the seasoned flour, coating completely. Dredge the softshell and oysters as well, coating completely.

    Fry the seafood in the hot oil until golden-brown, stirring constantly, about 4 minutes. Remove and drain on a paper-lined plate. Season with salt and hot sauce.

    Split the French bread loaves in half. Spread mayonnaise on both sides.

    Build the sandwich with the fried seafood, lettuce, and tomatoes. Serve immediately.
