Fresh Tomato Potato Tart

  • 1 sheet Puff pastry
  • 3 medium Potatoes
  • 4 large Tomatoes
  • 1 cup Creme fraiche
  • 0.5 cup Grated Gruyere
  • 2 tbsp Dijon mustard
  • 2 tbsp Olive oil
  • 1 tsp Thyme
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

    Preheat oven to 400 degrees F.

    Place puff pastry on a baking sheet.

    Prick with a fork and brush with olive oil.

    Mix creme fraiche with Dijon mustard.

    Spread over pastry, leaving a 1-inch border.

    Arrange slices in overlapping pattern on tart.
