Fresh Peach Muffins With Pecan Crumb Topping

- 2 cup finely chopped fresh peaches
- 1 0.5 cup sugar
- 0.5 cup butter, at room temperature (1 stick)
- 2 eggs
- 1 0.5 cup milk
- 4 cup all-purpose flour
- 4 tsp baking powder
- 1 tsp salt
- 0.3 cup brown sugar
- 0.3 cup ground pecans
- 0.3 tsp ground cinnamon
- 4 tbsp cold butter

Preheat oven to 400°F. Lightly grease 24 muffin cups.

Place peaches in a bowl, cover with 1/2 cup sugar, mix, and let sit for 1 hour.

Using an electric mixer, beat remaining 1 cup sugar with butter until light and fluffy. Add eggs one at a time, beating well after each addition. Add milk.

In a separate bowl, sift together flour, baking powder, and salt. Gradually fold dry ingredients into the wet mixture.

Drain the macerated peaches (reserve liquid) and fold into batter. Fill muffin cups 2/3 full.

For crumb topping: combine brown sugar, pecans, and cinnamon. Cut in cold butter until crumbly. Sprinkle over muffins.
