Fresh Peach Muffins With A Pecan Crumb Topping

  • 2 cup finely chopped fresh or frozen peaches
  • 1 0.5 cup sugar
  • 0.5 cup butter at room temperature
  • 2 whole eggs
  • 1 0.5 cup milk
  • 4 cup flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 0.3 cup brown sugar
  • 0.3 cup ground pecans
  • 0.3 tsp ground cinnamon
  • 4 tbsp cold butter

Instructions

    Preheat the oven to 400F. Lightly grease 24 muffin cups.

    Place the peaches in a bowl, cover with 1/2 cup sugar, mix, and allow to sit for 1 hour.

    Using an electric mixer with a paddle, cream the butter and remaining 3/4 cup sugar until smooth and pale, about 3 minutes. Add the eggs one at a time and beat until fluffy.

    In a mixing bowl, combine 3 1/2 cups flour, baking powder, and salt. Alternately fold in the milk and flour mixture into the butter mixture, being careful not to overmix. Fold in the peaches.

    Spoon 1/4 cup of filling into each prepared muffin cup.

    In a small bowl, combine remaining flour, brown sugar, pecans, and cinnamon. Add cold butter and mix with hands until it resembles a coarse crumb. Sprinkle 1 tablespoon over each muffin.

    Bake 15-20 minutes or until golden brown. Serve warm with butter.
