Fresh Pasta With Shiitakes

- 2 tbsp olive oil
- 2 tbsp chopped shallots
- 1 0.5 lb fresh shiitake mushrooms, stemmed and sliced
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 tbsp chopped garlic
- 3 cup veal or beef reduction
- 0.5 cup heavy cream
- 8 oz Parmigiano-Reggiano cheese, grated
- 1 lb fresh fettuccine or linguine, cooked until tender

In a large sauté pan over medium heat, heat the olive oil. Add the shallots and shiitake mushrooms. Season with salt and pepper. Sauté for 3 minutes.

Add the garlic and the veal reduction. Bring to a boil, then reduce to a simmer and cook for 3 to 4 minutes.

Stir in the cream and half of the grated cheese. Continue to simmer for 2 minutes.

Add the cooked pasta and toss to combine. Season with salt and pepper.

Divide among serving plates and garnish each with the remaining grated Parmigiano-Reggiano.
