Fresh Pasta

Classic homemade pasta dough using durum semolina flour, eggs, olive oil, and Romano cheese, rolled and cut with a pasta machine.

  • 3 cup durum semolina flour
  • 1 tsp salt
  • 2 whole eggs (up to 3)
  • 1 tbsp olive oil
  • 0.5 cup grated Romano cheese

Instructions

    Mix the semolina and salt together. On a large work surface, form a mound and create a well in the center.

    In a small bowl, beat the eggs and oil together until smooth. Pour into the well.

    Working from the inside of the well out, gradually work the semolina into the eggs until all flour is incorporated.

    Wrap with plastic and allow to rest for 30 to 40 minutes.

    Remove and temper for 5 minutes. Flour a surface and roll the dough out to 1/2-inch thick. Cut into thirds.

    Using a pasta machine, carefully work one piece through. Lightly toss the cut pasta in flour to prevent sticking. Repeat with remaining pieces.
