Fresh Lobster Salad

- 1 cup extra-virgin olive oil
- 0.5 cup fresh orange juice (from 2 oranges)
- 2 tbsp minced shallots
- 1 tsp minced garlic
- 1 tsp honey
- 4 cup fresh baby arugula, washed and patted dry
- 1 lb cooked lobster meat, sliced 1/4-inch thick
- 0.3 lb fresh haricot vert, stemmed and blanched
- 0.5 cup cured Greek olives, pitted and halved
- 2 hard-boiled eggs
- 1 tbsp finely chopped fresh parsley
Instructions

In a mixing bowl, whisk the olive oil and orange juice until emulsified. Whisk in the shallots and garlic. Season with honey, salt, and pepper.

Toss the arugula with 1/3 of the dressing. Season with salt and pepper. Mound the greens in the center of each plate.

Toss the green beans and olives with 1/3 of the dressing. Arrange around the arugula.

Toss the lobster with the remaining dressing. Place the lobster on top of the greens.

Quarter the hard-boiled eggs and arrange around the salad. Garnish with chopped parsley.
