Fresh Florida Orange Cake

- 2 cup All-purpose flour
- 2 tsp Baking powder
- 0.5 tsp Salt
- 0.8 cup Sugar
- 2 each Eggs
- 0.8 cup Fresh orange juice
- 2 tbsp Orange zest
- 0.5 cup Vegetable oil
- 1 tsp Vanilla extract

Preheat oven to 350 degrees F.

Whisk flour, baking powder, and salt.

In another bowl, whisk eggs with sugar until pale.

Add orange juice, zest, oil, and vanilla.

Fold in flour mixture until just combined.

Pour into greased cake pan.

Bake 40-50 minutes until a toothpick comes out clean.

Cool in pan for 15 minutes.

Turn out onto wire rack and cool completely.

Serve with toasted almond ice cream.
