Fresh Cranberry Compote
A thick, tangy cranberry compote with orange zest and cinnamon, thickened with cornstarch and chilled — perfect alongside roasted meats or as a dessert topping.

- 6 oz fresh cranberries, rinsed and picked over
- 1 tbsp orange zest
- 0.5 cup sugar
- 1 cup water
- 1 pinch salt
- 1 pinch ground cinnamon
- 0.3 cup plus 1 tbsp cornstarch
- 0.3 cup fresh orange juice

In a non-reactive non-stick saucepan over medium heat, combine cranberries, orange zest, sugar, water, salt, and cinnamon. Bring to a boil and cook 10 minutes.

Dissolve 1 tbsp cornstarch in the orange juice. Add to cranberries and stir to blend.

Simmer another 15 minutes until mixture is thick.

Remove from heat and cool completely.

Cover and refrigerate until chilled. Yields about 5 cups.
