Fresh Corn Chowder

  • 6 fresh ears of corn
  • 0.3 cup chopped onion
  • 4 cup whole milk
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 egg, slightly beaten
  • 1 tsp salt
  • 0.3 tsp black pepper

    Cut corn kernels from cobs; scrape cobs. Combine corn, onion, ½ cup water, and salt. Simmer 15 minutes.

    Stir in 3½ cups milk and butter; bring nearly to a simmer.

    Combine remaining ½ cup milk with flour; add to corn mixture. Cook and stir until thickened.

    Stir 1 cup hot mixture into beaten egg; return to pan and cook on low 2 minutes more. Serve hot.
