French Onion Beef

  • 1 0.3 lb boneless beef round steak
  • 8 oz fresh mushrooms, sliced
  • 1 large onion, sliced into rings
  • 10 0.5 oz condensed French onion soup
  • 6 oz herb stuffing mix
  • 0.3 cup butter, melted
  • 1 cup shredded mozzarella cheese

Instructions

    Cut beef into 6 serving-size pieces.

    Layer half the beef, mushrooms, and onion rings in a 3½–4 quart slow cooker. Repeat layers.

    Pour French onion soup over everything.

    Cover and cook on LOW 8–10 hours, until beef is very tender.

    About 20 minutes before serving, toss stuffing mix with melted butter and ½ cup liquid from the slow cooker.

    Place stuffing on top of contents in slow cooker. Increase heat to HIGH and cook 10 minutes until stuffing is fluffy.

    Sprinkle with mozzarella, cover, and cook until cheese melts, about 5 minutes.
