Flo's Tuna Melt

Open-faced tuna salad melts on toast with cheddar, tomato and avocado, served with coleslaw and pickles.

  • 12 oz tuna steak, poached
  • 0.5 cup minced yellow onions
  • 3 hard-boiled eggs, chopped
  • 1 tsp minced garlic
  • 1 tbsp sweet pickle relish
  • 0.3 cup mayonnaise
  • 0 to taste salt and freshly ground black pepper
  • 8 slice white bread, toasted
  • 4 slice medium cheddar cheese
  • 4 slice tomato
  • 1 avocado, sliced
  • 2 cup coleslaw

Instructions

    Preheat the oven to 400 degrees. Crumble the poached tuna into a mixing bowl. Add the onions, chopped eggs, garlic and relish. Mix thoroughly.

    Add enough mayonnaise to bind the mixture. Season with salt and pepper.

    Spread the tuna mixture over 4 slices of toasted bread. Top each with a slice of cheddar cheese and a slice of tomato.

    Place on a baking sheet and bake for 5-7 minutes until the cheese is melted and bubbly.

    Top each open-faced sandwich with avocado slices. Serve with coleslaw, pickles and potato chips.
