Fish with Cucumber Sauce

- cucumber -- chopped and seeded

- 2 cup radishes -- chopped
- 1 tsp vegetable oil
- 2 tbsp tarragon vinegar1/4 teaspoon dried tarragon

salt and pepper -- to taste 4 tilapia fillets ( 6 ounces each ) 2 tablespoons butter Combine first six ingredients in a small bowl; mix well. Let stand at room temperature while preparing fish. Saute tilapia ( also known as St. Peters Fish) in butter in a large skillet over medium heat for two to three minutes on each side or until fish flakes easily. Transfer to serving plate.
