Fiadone
A classic Corsican ricotta tart — lemon-scented fresh cheese with sultanas baked in a 9-inch pastry crust until golden, served with fresh mint.

- 1 lb fresh cheese such as ricotta
- 0.5 cup sugar
- 2 each egg yolks
- 1 each egg
- 1 each lemon, zested
- 1 each lemon, juiced
- 0.5 cup sultanas or golden raisins
- 1 each 9-inch unbaked pie crust
- 8 sprig fresh mint, for garnish

Preheat oven to 350°F.

In a mixing bowl, combine cheese, sugar, egg yolks, egg, lemon zest, and lemon juice. Mix well.

Fold in the sultanas.

Pour into the prepared pie crust. Place in the center of the oven.

Bake about 30 minutes until top is golden brown. Cool completely. Garnish with fresh mint sprigs.
