Fettucini Romano Ala Fratelli

Spinach fettuccini tossed in a silky garlic, white wine, and Romano cheese cream sauce — quick and elegant.

  • 1 tbsp olive oil
  • 3 clove garlic, crushed
  • 0.5 cup white wine
  • 0.8 cup half-and-half
  • 1 cup Romano cheese, grated
  • 1 lb dry spinach fettuccini, cooked
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

    Add olive oil to a hot 10-inch pan. Add garlic and sauté over high heat for about 1 minute.

    Add white wine and simmer for about 2 minutes. Add half-and-half and bring back to a simmer.

    Add Romano cheese and stir until smooth, about 2 minutes.

    Add cooked pasta to the pan and toss until coated. Portion onto plates and garnish with chopped parsley.
