Fernandina Shrimp Gravy
A Florida Lowcountry specialty: shrimp in a rich caramelized gravy with salt pork, onion, bell peppers, and celery, served over rice.

- 1 tbsp granulated sugar
- 1 tbsp water (for caramel)
- 1 cup water
- 2 oz salt pork, diced
- 0.5 cup minced onion
- 0.5 cup diced green bell pepper
- 0.5 cup diced red bell pepper
- 0.5 cup diced celery
- 1 0.5 lb shrimp, shelled and cleaned
- 1 tsp salt
- 0.3 tsp freshly ground black pepper
- 1/8 tsp crushed dried red pepper
- 2 cup hot cooked rice
Instructions

Stir sugar over moderate heat until it melts and turns golden caramel. Carefully add 1 tbsp water.

Add 1 cup water and salt pork; simmer 10 minutes.

Add onion, bell peppers, and celery; cook until tender.

Add shrimp and seasonings; cook until shrimp are pink. Serve over rice.
