Fajita Shrimp Kabobs

- 2 tsp lime juice
- 2 tsp vegetable oil
- 1 tsp fresh cilantro, minced
- 0.8 tsp ground cumin
- 1/8 tsp salt
- 1/8 tsp Tabasco sauce
- 1 0.3 lb large shrimp, peeled and deveined
- 1 large yellow or red bell pepper, cut into 1-inch squares
- 8 small flour tortillas small (6-7 inch) flour tortillas, warmed
- 1 large tomato, seeded and diced
- 4 cilantro sprigs fresh cilantro sprigs, for garnish

In a large bowl, combine the lime juice, oil, minced cilantro, cumin, salt, and Tabasco. Add the shrimp and mix well; set aside while preparing the skewers.

Adjust the oven rack so it is 4–5 inches from the broiler element and preheat the broiler.

Alternate the shrimp and bell pepper squares on eight 6 to 8-inch skewers.

Broil the kabobs for 3–4 minutes per side until the shrimp are pink and cooked through.

Serve the shrimp and peppers in the warmed flour tortillas, topped with diced tomato and garnished with cilantro sprigs.
