  • 1 lb dried white beans (cannellini or navy), soaked overnight
  • 0.3 cup extra-virgin olive oil, divided
  • 2 clove garlic, peeled and chopped
  • 1 oz pancetta, finely chopped
  • 6 large fresh sage leaves (or 1 tsp dried sage)
  • 1 tomato, cored, peeled, and finely chopped
  • 1 lb medium shrimp, peeled and deveined
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions

    Soak beans in cold water overnight; drain well.

    Place drained beans in a pot with half the olive oil, garlic, pancetta, sage, and tomato. Cover with cold water by 3 inches.

    Cook gently at a simmer for about 1 hour, until beans are tender and most liquid has been absorbed. The beans should be moist and succulent. Season with salt.

    Sauté shrimp in remaining olive oil in a hot skillet with a pinch of salt and pepper, about 2 minutes per side. Do not overcook.

    Serve shrimp over the warm beans, drizzled with additional olive oil.
