Escalloped Oysters

- 1 cup margarine or butter
- 1 cup all-purpose flour
- 1 0.5 tsp paprika
- 0.5 tsp salt
- 0.3 tsp black pepper
- 1 dash cayenne pepper
- 2 medium onions, chopped
- 1 medium green bell pepper, chopped
- 0.5 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp Worcestershire sauce
- 1 quart oysters, with their liquid
- 0.3 cup cracker crumbs

Melt the margarine in a large saucepan. Whisk in the flour until smooth. Cook over medium heat, stirring, until the roux turns a light golden color.

Add the paprika, salt, pepper, and cayenne. Remove from heat.

Add the chopped onions, green pepper, and garlic to the roux. Return to medium heat and cook slowly for 5 minutes, stirring constantly.

Remove from heat again; add the lemon juice, Worcestershire sauce, oysters, and their liquid. Stir well.

Place the mixture into a greased casserole dish. Top with the cracker crumbs.

Bake at 375°F for 20–25 minutes, or until the top is golden and the filling is bubbly.

Serve hot as a main dish or side with crusty bread.
