- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (10 oz) enchilada sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 6 count corn tortillas, cut into quarters
- 2 cup shredded Mexican blend cheese
- 0.5 cup sour cream
- 0.3 cup fresh cilantro, chopped
- 1 can (4 oz) diced green chiles

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

Brown ground beef in a skillet over medium-high heat; drain fat. Stir in taco seasoning and half the enchilada sauce. Add black beans, corn, and green chiles.

Arrange half the tortilla pieces in the bottom of the prepared dish.

Spread the beef mixture over the tortillas. Pour remaining enchilada sauce over the top.

Arrange remaining tortilla pieces over the sauce. Sprinkle cheese evenly over the top.

Bake uncovered for 25–30 minutes until cheese is melted and bubbly.

Let cool 5 minutes. Top with sour cream and cilantro before serving.
