Emeril's Open Face Reuben

  • 1 cup Thousand Island dressing
  • 8 slice marble rye bread, 1/4 inch thick
  • 2 cup sauerkraut
  • 2 lb beef pastrami
  • 1 lb Swiss cheese, sliced
  • 1 cup pickled beets
  • 2 cup coleslaw
  • 8 each kosher dill pickle spears

Instructions

    Preheat the oven to 400°F (205°C).

    Spread Thousand Island dressing generously on one side of each slice of marble rye.

    Spoon the sauerkraut on top of the dressing and spread evenly.

    Lay the slices of pastrami on top of the sauerkraut. Cover with slices of Swiss cheese.

    Place the open-face sandwiches on a baking sheet and bake until the cheese melts, about 8 minutes.

    Serve warm with pickled beets, coleslaw, and kosher dill pickle spears on the side.
