Emeril's Kicked Up Ball Park Sandwich

  • 6 cup shredded duck confit
  • 1 0.5 cup mayonnaise
  • 0.5 cup minced red onions
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 12 slice caramelized onion focaccia
  • 12 slice fresh tomato, about 1/4 inch thick
  • 1 lb fresh mozzarella cheese, sliced
  • 2 lb sweet potatoes, peeled and thinly sliced
  • 2 cup oil for frying

Instructions

    In a mixing bowl, combine the duck confit, 1 cup of the mayonnaise, and red onions. Mix well. If too dry, add more mayonnaise. Season with salt and pepper.

    Spread about 1 cup of the duck salad evenly over 6 slices of focaccia.

    Season the tomato slices with salt and pepper. Lay 2 slices each of tomato and fresh mozzarella over the duck salad. Top with the remaining focaccia slices. Press sandwiches together.

    Preheat the fryer to 360°F (182°C). Fry the sweet potato slices in batches until golden brown, about 4 minutes. Drain on paper towels and season with salt.

    Slice each sandwich in half diagonally. Serve with the sweet potato chips on the side.
