Emeril's Ale

Emeril's own home-brewed amber ale made with light malt syrup, hops, and dry yeast — fermented for 1.5 weeks then bottle-aged 2-3 weeks for a rich, hoppy result.

  • 2 can light malt syrup
  • 1 gallon water (for boiling)
  • 1 oz hops
  • 4 gallon water (for fermenting)
  • 2 package dry yeast

Instructions

    In a large nonreactive stock pot, add malt syrup and 1 gallon water. Add hops. Bring to a boil.

    Reduce heat to a simmer and boil for 1 hour, stirring often. Cool.

    Strain the hop mixture and pour through a funnel into a sterilized 7-gallon fermenting tank. Add 4 gallons water. Add yeast.

    Seal the top with a stopper. Ferment for 1.5 weeks.

    Strain the beer. Bottle and age for another 2-3 weeks before enjoying.
